Describe the hardware once, then return to roasting.
Choose a supported roaster, controller, or probe, retain its capacity and connection method, and pin the machine Pilot should open with.
Put a known-good roast beside the one unfolding and work to it by hand, or hand the curve over and let Pilot hold the machine on it. Auto roast drives a PID-capable roaster to the target, cuts the heat if a probe stops reporting, and picks the roast back up if the connection drops.

Compatibility
Start with the machine you already have.
Pilot is free, so finding out where your roaster lands costs one batch. Every machine below is a preset you pick from a list — no register hunting.
Roasters
Full control, tested.
Kaleido and IKAWA over USB, Bluetooth, WiFi, or Ethernet. Heater, fan, and drum, with PID and Auto roast. Kaffelogic runs its own profile and hands Pilot the fan.
Also connects
Control built.
Aillio, Hottop, ROEST, Sandbox Smart. Heater, fan, and drum are implemented, but not yet run on a real one of each. Pilot is free, so confirming yours costs a batch.
Read and record
The roaster keeps the wheel.
Loring, Probat, Giesen, Diedrich, Mill City, Toper, Joper, Coffed, IMF, San Franciscan, Sivetz, Besca, and more over Modbus or Siemens S7. Live curve and the full record; the panel still drives.
Probes and fallback
No roaster interface at all.
Phidget thermocouples over USB, or any generic serial or Modbus probe. With nothing connected, enter readings by hand and the roast still lands in the record. Demo mode runs the whole app on sample data.
Operating boundary
Local first, connected when useful.
Pilot can stand alone at the roaster. Signing in adds shared Cloud context without turning a network interruption into a failed roast.
The Mac keeps the roast.
Pilot works locally and continues capturing when the internet connection is unavailable.
Work the machine by hand with the target drawn beside you, or turn on Auto roast and let Pilot hold the roaster to the curve. It does not forecast the roast, and it does not switch itself on.
Questions at the machine
Yes. Pilot works locally on its own. When Cloud cannot be reached it continues with local data and shows the connection state rather than logging you out.
